we're nearing the end of the month of made-ahead meals and this afternoon I just. needed. to. eat. lunch. now.
so I cheated and popped open a can of chicken tortilla soup from the pantry and made a quick quesadilla out of leftover ingredients from the yummy pork burritos we enjoyed a few nights ago.
usually homemade is best and now that it's colder (today it rained for over 12 hours in a row. that's crazy here in Southern California), I am super motivated to make up a couple big batches of soup to stock my freezer for the coming months. But today, all I wanted to do was eat.
